INGREDIENTS: (1 toast)

1/2 ripe avocado

1 slice of bread (used garlic bread)

1 egg

1 green onion

1 tsp soy sauce

1/2 tsp sesame seeds

1/2 tbsp butter

~chilli oil~

1/2 cup neutral oil

2-3 tbsp crushed red chilli flakes

5-6 garlic cloves

1/4 tsp salt

METHOD: Chilli Garlic Oil:

1. Finely chop 5-6 cloves of garlic. Add more or less depending on taste

2. Gently fry the garlic in 1/2 cup neutral oil until it just starts to change color

3. If the oil is sizzling, let it sit for 30 seconds so that it doesn’t burn the chili flakes. When it stops sizzling pour the hot oil into a heat safe jar with 2-3 tbsp chili flakes and 1/4 tsp salt

4. Chilli garlic oil with chilli garlic crisp is ready! Store it upto 1 month in the refrigerator (if it lasts that long

😋) Avocado Toast:

1. Fry a slice bread with some butter until golden on both sides

2. Mash half a ripe avocado in its shell (one less dish to wash!) and spread it over the bread

3. On medium high flame, add 1 tbsp of the chili oil and fry an egg until the edges are crisp. If you don’t like runny eggs, flip over and cook the other side as well

4. Place the fried egg over the mashed avocado and add a splash of soy sauce (used light) and some of the chili garlic crisp

5. Garnish with thinly sliced green onions, toasted sesame seeds and enjoy! _______________________________________

SUBSTITUTES:

• No garlic bread? Rub a clove of raw garlic over freshly fried/toasted bread and it will taste like garlic bread

• No soy sauce? Add some salt to the eggs while frying

• No butter? Chili oil/olive oil works too

• No sesame seeds? Crushed peanuts also taste great

TIPS:

• A ripe avocado will be firm yet slightly soft and the stem part will be green

• The recipe makes 1/2 cup of chili oil. This can be used to garnish sandwiches, salads, soups, noodles, fried rice, the list goes on!

• If you can’t eat bread, this combination of avocado, fried egg and chili oil works well with rice too
